IMHO the oil in the GT will be fine. Just be sure to run the car for a while and let the moisture cook out properly. The fuel is another issue. If your worried about the fuel turning to jelly on you, I'd get a can of 3M fuel additives to clean out that stuff. I think the 3M products are good for the fuel system on several levels.
As a side note, if you know the GT will be sitting for long periods of time in the future, there are some good products to put in the gas for storage.
