First off, half shaft inspection. Maybe compare paint thickness to another GT.

I believe that should be part of the inspection process considering the issues with the filler tube. The dash engine light would not be lit they kept the tank full and the OBD was reset. But if it did throw a code prior and was reset, the "passed emmisions" green light on the reader/programmer would be still be yellow looking for a successful vacuum test cycle. This could be Indicative of a fuel filler issue we are all familiar with and not inexpensive or easy to correct. Just MHO.

For the paint, look for raised stripes painted over base color not cleared smooth.

Very interesting thanks for sharing. Agreed half shafts must be checked. I did not check before purchase but immediatley after and they bolts were backed out on one side, you can see my earlier post. As you stated once pans are off any leaks will be apparent. With those things confirmed I saw no issues that would keep me from purchasing.
