Valve Stem - when to change?

Although my car has 500 miles I'm looking to replace the tires soon. Should the valve stem assembly be changed as well?

Not that I am aware.

Not necessary unless damaged. You can replace valve assembly inside if you have a leak.

Check with your tire installer. They should have seal kits for the valve stems. If yours are 15 yrs old, might be good to have them replaced.
