Depends where you go. I've driven on many a deserted road in CA including long stretches of PCH north of SF.

I used to ride a motorcycle from SF to Inverness via Hwy 1 early Sun morning. That road was find going there on the way back after breakfast some traffic. On weekdays not during summer break the road doesn't have much traffic, but in the summer a lot of tourist with RVs and youngsters going to the beaches make the road no fun at all.
