I have a Zoom H1 that I plug in a lengthy cable to a Rode Stereo Mic. The Zoom has it's own mic but the Rode seems to produce a lot better sound. I have the Rode attached to a GoPro suction cup mount on the windshield or door roof. You then control the recording with the Zoom as a handheld controller. You will want to fool around with the input level to once or twice to get it right up before it clips. Can be done in a few mins the first time out.
